Sweet Potato Gnocchi

So I didn't even know what Gnocchi was until last year. I don't think I'd even heard of it until The Oven Mits told me about some amazing gnocchi she had in Vancouver, and even then I thought it was just some sort of pasta so I wasn't that interested in trying it. But when I learned that gnocchi was actually potato that was made to look like pasta, I was fascinated, and have always wanted to try it.
So today was the day! And I also wanted it to be kinda healthy, so I went with sweet potato rather than regular potato.

So this is the recipe we followed. Yes, it was vegan (for obvious reasons), but the only difference between vegan and non-vegan gnocchi is that you omit ricotta cheese for the vegan version and I don't think I like ricotta cheese anyway, so that wasn't a big deal. Anyway, the instructions are very easy to follow, especially since you're only using four ingredients (sweet potato, flour). We actually added salt and pepper to it too, but it was still a little bland so I would suggest adding some other herbs/spices to it to make it more flavorful. Having said that, when you have it with some sort of sauce (we had it with pesto sauce) it doesn't really matter too much if it's bland. Oh also, the recipe suggested using All-Purpose flour, but we wanted it to be less carb-y so we went with a mixture of All-Purpose flour and Soy Flour (yes, my mum has Soy Flour - she has everything!), and it tasted fine with that. I'm not sure if the Soy Flour maybe affects the texture or something, but taste-wise it was fine!


Anyway, there's not too much more I can say! Like I said, the instructions are very easy to follow and there isn't really anything complicated about making gnocchi! If you are interested, this is the pesto recipe we used. Ciao!

    I also made some sweet potato gnocchi. The first time I just tossed it with some marjoram, olive oil, salt, and parmesan cheese. It was superrrr delicious! Not too heavy and you could still taste the sweet potatoes. The second time I made it with browned butter sauce (this is the recipe I used: http://www.wildyeastblog.com/2008/10/20/sweet-potato-gnocchi/). I was not a big fan of this one at all. BUT I also really don't like my meals to be sweet. So if you do, this may be what you are looking for!
