Cauliflower Crust Pizza

Came upon this on Pinterest :)  I never realized how many things cauliflower could be used for.  This started a cauliflower trend in my house- cauliflower rice, roasted cauliflower, cauliflower in mexican food and of course, cauliflower crust for pizza.  It was really easy to make and super delish.  I like the fact that it was so full of veggies and low carb.  Even though I love bread and carbs, I didn't miss it in this.  Of course, the fact that it's full of cheese helped a lot.


You will need:
1/2 large head cauliflower (or 2+ cups shredded cauliflower)
1 large egg
1 cup finely shredded mozzarella cheese (or try another kind!)
1 teaspoon dried oregano
1/2 teaspoon dried minced garlic (or fresh garlic)
1/2 teaspoon onion salt


1. Shred the cauliflower into small crumbles. You can use the food processor if you'd like, but you just want crumbles, not puree. You'll need a total of about 2 cups or so of cauliflower crumbles (which is about half a large head of cauliflower. Place the cauliflower crumbles in a large bowl and microwave them (dry) for 8 minutes (see Tips below if you do not have a microwave). Give the cauliflower a chance to cool.


2. Prepare the crust: Preheat the oven to 450 degrees F. Spray a cookie sheet or pizza pan with nonstick spray (or use a nonstick surface). In a medium bowl, mix the cauliflower crumbles (about 1 1/2 cups since they shrink after cooking) with the remaining crust ingredients. Pat the "crust" into a 9 to 12-inch round on the prepared pan. Spray the crust lightly with nonstick spray and bake for 15 minutes (or until golden). Remove the crust from the oven and turn the heat up to broil.


3. Prepare the pizza: Spread the sauce on top of the baked crust, leaving a 1/2-inch border around the edge.  Add whatever veggies you want.  Sprinkle the remaining cheese on top. Broil the pizza 3 to 4 minutes, or until the toppings are hot and the cheese is melted and bubbly. Cut into 6 slices and serve immediately.






Some tips from when I was making it:
- I found it turns out better to make two smaller pizza rather than one large one.  I tried making sticks and those turned out really nice too.
- I flipped the crust one while it was baking.  I'm not sure if it was necessary to do this but I did anyway.

Mexican Stuffed Bell Pepper

I don't get home until 9/9:30 pm nowdays after work so I need really quick, but yummy, things to make for lunch the next day. Last night, I decided to use some things that were in the fridge and turn them into something yummy. We had a whole lot of bell peppers, beans & veggies so I decided to make a stuffed bell pepper.

I didn't follow a recipe but here's what I did:
- Cut pepper in half and scoop out the seeds. Place pepper in a preheated oven at 450 degrees.
- Meanwhile, stir-fry onions, chopped peppers, green onions or whatever other vegetable you want. Add refried beans and a little bit of salsa to the veggies.
- Take pepper out of the oven (careful), stuff with the beans & veggies, top with desired amount of cheese & place back in the oven until cheese is melted.

I was making this for lunch the next day (& didn't have much time) so I just baked until the cheese had melted. But if making this to eat right away, keep in the oven for a little bit longer.


It was quick to make & easy to take to work. I heated it up for lunch & thoroughly enjoyed it :)

(Vegan) Mac & "Cheese"

So this is a vegan recipe that I altered & modified (and ended up making it non-vegan) until it was to my liking. It's for mac and cheese but I recommend not calling it that because it creates unrealistic expectations. If you make it thinking it will taste like cheese, you will be very disappointed (not that it tastes bad). It's actually really good and a much healthier alternative to real mac and cheese.

Sweet Potato Stuffed Zucchini

Yes, it is another sweet potato recipe. I'm not totally sure where the obsession came from. But it's fun so far! I had made a mexican stuffed zucchini over winter break and was really craving it a couple weeks ago. I looked in the fridge though and had no beans! Also, it was super cold/snowy out and not worth going all the way to get a can... so I looked up other stuffed zucchini recipes. I found this one and it looked perfect!

Sweet Potato Gnocchi

So I didn't even know what Gnocchi was until last year. I don't think I'd even heard of it until The Oven Mits told me about some amazing gnocchi she had in Vancouver, and even then I thought it was just some sort of pasta so I wasn't that interested in trying it. But when I learned that gnocchi was actually potato that was made to look like pasta, I was fascinated, and have always wanted to try it.
