Sigh I know, I haven't posted in forever! I'll try to keep up. Today, for lunch, The Cookie Monster and I made sweet potato burgers. What can I say, cooking for yourself isn't nearly as fun.
These burgers were delicious and flavorful, though the process was a bit time consuming, so they're great for a weekend lunch.
I was inspired by this recipe: http://vanillabasil.blogspot.com/2009/01/light-hearty.html though I made a lot of modifications to that recipe. My version (with modifications) is below:
Sweet Potato Burgers
1 large sweet potato (or 2 small)
1 small red onion, cut
3 garlic cloves, cut
1 cup rolled oats
1 tsp salt
1 tsp freshly ground black pepper
1 tsp coriander
1 Tbsp cumin
+ any other seasonings you enjoy
1/2 cup toasted chopped pecans (I was short on pecans so I used walnuts, but I think pecans would taste better)
Optional: breadcrumbs to coat patties
Topping:
1 small white/yellow onion, cut and caramelized
Directions:
Cook the sweet potatoes however you prefer. I microwaved mine to save time, however a pressure cooker would be ideal as it conserves energy and doesn't leach all the nutrients out of the potato (like boiling does). After cooking peel the potato.
While the potatoes are cooking, saute the onions and garlic until onions are soft.
In a food processor, combine oats and seasonings. Pulse until oats are finely ground. Next, add in sweet potato and sauteed onions and garlic. Mix until well combined.
Enjoy the patty between toasted bread, topped with caramelized onions, and with veggies of your choice!

Scoop out the contents of the food processor into a large bowl and mix in the pecans. Shape the mixture into patties with your hands. If the mixture is too sticky, coat each patty with breadcrumbs. Cook each patty in a little bit of oil, on low heat, for a couple minutes on each side.
