Sweet Potato Stuffed Zucchini

Yes, it is another sweet potato recipe. I'm not totally sure where the obsession came from. But it's fun so far! I had made a mexican stuffed zucchini over winter break and was really craving it a couple weeks ago. I looked in the fridge though and had no beans! Also, it was super cold/snowy out and not worth going all the way to get a can... so I looked up other stuffed zucchini recipes. I found this one and it looked perfect!

Stuffed Zucchini
4 large-ish zucchini
1 large-ish sweet potato
1 cup black beans
1 tsp cumin
1/4 tsp garlic powder
1/4 tsp salt
2 T chopped cilantro

Preheat oven to 350*.
Cook sweet potato as desired (steam, boil, bake) and remove skin.  Mash with a fork and incorporate black beans, mashing along the way.  Stir in the remaining ingredients until evenly distributed.
Hollow out zucchini by slicing zucchini in half and then by scoring a v-notch and popping out the interior of the vegetable.  Whittle away as much of the interior as you can without compromising your zucchini boat.  Mound sweet potato filling in zucchini boats.
On a cookie sheet sprayed with cooking spray, line stuffed zucchini and bake for 20 minutes.

As a side note, I didn't add black beans to this recipe. But I did put the zucchini flesh back in after sauteing it a bit. Also, I of course live on the spicier side of life (lol..) so I add a bit of chili pepper. And one last thing.. I used one sweet potato for 1 full zucchini. I used the rest of the proportions the same way as it says though! This was really really good. Can't wait to make it again soon!!

  1. I made this again today with a couple additions. I added spinach to the chopped zucchini flesh while sauteing. I pretty much always add nutmeg when I use spinach because I think the flavors go together really well! I also added some crushed chips on top before putting the zucchini in the oven which was nice because it gave it a little more texture!
