Sweet Potato Pancakes

For my birthday, the Health Nut and the Vegan made wheat chocolate chip pancakes for me from scratch! They are so much better than the regular old Bisquik kind, so I figured I would look a recipe for another type of pancake from scratch! It's pretty simple and really good! Check it outtt

16 ounces orange-flesh sweet potato (about 2 medium sweet potatoes)
3/4 cup whole-wheat flour
3/4 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon kosher salt
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 cup (4 tablespoons) unsalted butter, at room temperature
2 large eggs, beaten
1 1/2 tablespoons unsulphured molasses
1 tablespoon vanilla extract
1 1/2 cups plain soy milk

1. Cook the sweet potatoes
2. While the sweet potatoes are cooking, sift together in a large mixing bowl the whole wheat flour, all-purpose flour, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
3. When the potatoes have cooled slightly, add the butter, and mash until relatively smooth. Add the eggs, molasses, and vanilla extract and blend. Finally, mix in the soymilk.
4. Add the sweet potato mixture to the dry ingredients and mix with a spoon until just moistened (the batter will be lumpy), about 50 strokes. Set aside to rest.
5. Preheat a lightly greased skillet or griddle over medium heat. Using a 1/4 cup measure, pour the batter onto the preheated skillet or griddle. Turn the pancakes once with a spatula when the surface begins to bubble. Cook until golden brown.  Serve hot with your favorite pancake toppings.

I didn't have molasses, so I just omitted it. Also, I substituted skim milk for soy milk. These were great and I will be making them again soon :)

Sweet Potato Leek Hash Browns

I thoroughly agree with Turk (from Scrubs). Brinner... that is, breakfast for dinner... is by far the best meal ever (also, obviously, is brunch!)! So I decided to make these hash browns with a fried egg for dinner! It was super easy and you can change it up quite a bit, so think of the recipe as more of a baseline.

Sweet Potato Stuffed Zucchini

Yes, it is another sweet potato recipe. I'm not totally sure where the obsession came from. But it's fun so far! I had made a mexican stuffed zucchini over winter break and was really craving it a couple weeks ago. I looked in the fridge though and had no beans! Also, it was super cold/snowy out and not worth going all the way to get a can... so I looked up other stuffed zucchini recipes. I found this one and it looked perfect!

Sweet Potato Gnocchi

So I didn't even know what Gnocchi was until last year. I don't think I'd even heard of it until The Oven Mits told me about some amazing gnocchi she had in Vancouver, and even then I thought it was just some sort of pasta so I wasn't that interested in trying it. But when I learned that gnocchi was actually potato that was made to look like pasta, I was fascinated, and have always wanted to try it.
