(Vegan) Mac & "Cheese"

So this is a vegan recipe that I altered & modified (and ended up making it non-vegan) until it was to my liking. It's for mac and cheese but I recommend not calling it that because it creates unrealistic expectations. If you make it thinking it will taste like cheese, you will be very disappointed (not that it tastes bad). It's actually really good and a much healthier alternative to real mac and cheese.

Masala Omelette

So I made this for brunch for me and The Soul Mit (lol - obviously The Dark Chocolate came up with that). Sweet Potato Stuffed Zucchini

Yes, it is another sweet potato recipe. I'm not totally sure where the obsession came from. But it's fun so far! I had made a mexican stuffed zucchini over winter break and was really craving it a couple weeks ago. I looked in the fridge though and had no beans! Also, it was super cold/snowy out and not worth going all the way to get a can... so I looked up other stuffed zucchini recipes. I found this one and it looked perfect!

So I didn't even know what Gnocchi was until last year. I don't think I'd even heard of it until The Oven Mits told me about some amazing gnocchi she had in Vancouver, and even then I thought it was just some sort of pasta so I wasn't that interested in trying it. But when I learned that gnocchi was actually potato that was made to look like pasta, I was fascinated, and have always wanted to try it.
