Vegan Peanut Butter Chocolate Chip Cookies

Inspired by The Cookie Monster to veganize the peanut butter chocolate chip cookies she made, we found this somewhat healthy recipe online http://www.veganbaking.net/vegan-recipes/cookies/peanut-butter-chocolate-chip-cookies.html for vegan peanut butter chocolate chip cookies.
Excited, I set to work to combine my two favorite ingredients into one cookie. I made minimal substitutions, as the recipe suggested, even using soy flour, which I had never even seen before! The only substitution I made was maple syrup instead of brown rice syrup.

This recipe uses lots of flour: 3.5 cups of flour + 3/4 cup oats for 16 cookies (I am assuming the recipe implied large cookies). However, we followed all the measurements and made the dough. The dough didn't smell too great, and tasted pretty unpleasant too :-/ but the recipe comforted us by telling us the dough has a "bitter taste" from the soy flour which is unnoticeable after baking. Hoping for the best, we popped the cookies in the oven (there was clearly way too much dough for 16 cookies). However instead of that lovely cookie smell filling the air during baking, a strange smell filled the air and lingered after we took the cookies out from the oven. One bite confirmed our suspicions, the cookies basically tasted how they smelled: weird.

In retrospect the flour and the proportions combined to create an unsavory taste in the cookies. Most baking recipes that I've seen that call for whole wheat flour opt for whole wheat pastry flour, and these cookies tasted very wheat-y. Also, many recipes suggest mixing whole wheat and all-purpose flours to create a milder flavor in the flour. Maybe these cookies are an acquired taste as the recipe did receive two positive comments...? Hopefully we'll have better luck next time!

Below are some of the photos we took while making them. Unfortunately we didn't have a camera when we made these,so we had to make do with our phone cameras. The first picture is of the dough right before we put them in the oven. The second is of the aftermath - Kavin went through and destroyed all the cookies so that he could eat all of the chocolate chips, leaving behind this crumbled cookie mess! Sadly we took no photos of the actual finished cookies, but that's because we didn't like them so didn't really want to photograph something we didn't like!
