By The Vegan
I've been meaning to post this recipe for a while. Before classes started The Dark Chocolate and I made Mint Oreo Truffles (vegan of course). These are super-dee-duper easy and delectable (thank you, thesaurus.com).
Ingredients:
1 package Mint Oreos or Mint Newman O's
1 package Tofutti plain cream cheese
Semi-sweet chocolate chips or baking chocolate
Oil for melting chocolate
[Note: Mint Oreos are double stuff, resulting in a too sweet truffle. Use Mint Newman O's or regular Oreos with mint extract]
Directions:
First mix the entire package of Oreos along with the entire container of ice cream in a food processor until well combined.
Then, form the mixture into small balls (about the size of ping-pong balls) with your hands. Don't make the balls too big because they'll get bigger when you coat them in chocolate. Place the balls on a greased cookie sheet and place in the freezer for at least half an hour.
About 5 minutes before you're ready to take the balls out of the freezer melt the chocolate in a double boiler. Mix oil into the melting chocolate to make the chocolate runnier and easier to coat the balls with. Stir the chocolate to help it melt and prevent it from burning. Remember, NEVER add water [or non-dairy milk that contains water] into melting chocolate or it will seize up (i.e. get all chunky).
Move all the frozen balls to one side of the cookie sheet and line 3/4 of the cookie sheet with foil or wax paper.
Once the chocolate is melted, place a ball or two at a time in the chocolate and roll it around to fully coat it.
Once the truffle is coated use a toothpick, or a spoon, to deposit it back onto the foil on the cookie sheet.
As you're coating the truffles you may roll them in sprinkles, chopped nuts, crushed peppermint etc. Once you're done coating all the truffles, place them back in the freezer to cool for another 30-40 min.
Then remove, and enjoy! If you have leftovers, I'd suggest storing them in the fridge or they'll start to get mushy.
