Nutella Cheesecake Bites

February 5th this year was World Nutella Day! In honor of it, we all decided to make something super mouth-watering to show each other over webcam!! I decided to make nutella cheesecake bites! This worked out very well actually because The Dark Chocolate's birthday was the week before and I was able to make these to send to him as a surprise! He loves cheesecake and, let's be honest, who DOESN'T love nutella, so this was perfect!

Nutella Cheescake Bites

Ingredients:

for crust:
2/3 cup graham cracker crumbs
2 tablespoons sugar
2 tablespoons butter, melted

for cheesecake:
8 oz cream cheese, softened
1 14 oz can sweetened condensed milk
1 egg
1 teaspoon vanilla
1/4 cup sour cream
1/4 cup Nutella

Cooking Directions:

1. Pre-heat oven to 350 degrees.  Line a mini muffin tin with cupcake liners.
2. In a small bowl combine graham cracker crumbs, sugar and butter with a fork until well combined. 3. Place about 1 teaspoonful into each mini-muffin liner, pressing down firmly.  Bake for 5 minutes; set aside.
4. In a large bowl, beat cream cheese and sweetened condensed milk with an electric mixer until smooth.  Beat in egg and vanilla, and then sour cream, until well combined.
5. Spoon filling over prepared crusts, about a tablespoon to tablespoon and a half into each.
Forgot to take a picture of the crust so I took a picture of this instead!
6. Drizzle or pipe Nutella over filling and swirl with a toothpick.  ( I placed the Nutella into a plastic bag and clipped the corner to pipe.)
It is like getting hypnotized by Nutella
7. Bake for 15-20 minutes or until cheesecakes are set.  Remove from oven and allow to cool in the pan for 10 minutes.  Remove from pan onto wire rack to cool additional 10 minutes, cover and refrigerate for 30 minutes before serving.
Right out of the oven!
I couldn't wait for it to cool all the way before trying one so it was a little hot! But still super delicious! Also, the Nutella sinks all the way to the bottom!

 The only problem I had with this recipe was that Nutella is really not swirl-friendly! If you look at the original website, her swirls are so pretty... mine were not from using a toothpick. I don't understand how she got her nutella liquid-y enough to swirl.. maybe she melted it? Not sure, but it is worth a try! Oh, also, I really wish I could've made them actual 'bites' like she did in the mini muffin pan, but I only had the big pan! But you should definitely make these! The Dark Chocolate, his family, and The Soul Mit have taste-tested and approve :D
