So earlier this week I was really craving some cookies and had a lot of time to waste (actually, I should have been studying). I decided to make some coconut cookies. I originally wanted to make Coconut Nutella cookies, but decided to save my Nutella to eat with a spoon. :)

1- 1/4 cups all purpose flour (but I used whole wheat flour)
1/2 teaspoon baking soda
1/2 cup butter
1/2 cup packed brown sugar
1/2 teaspoon vanilla extract
1 egg
1/2 cup white sugar
1-1/3 cup coconut flakes
The recipe was really basic and didn't use any special ingredients. I had everything around my apartment anyways and you only bake them for 8-10 minutes so it didn't really take that long.
The most difficult part was waiting for them to finish baking because I was just so excited to eat them!! The finished product was amazingg and very chewy. I share with some friends and they were impressed with how delicious they were. I will definitely make these again. Surprisingly I still have some left. I thought I'd finish them in less than a day but I guess I've learned a bit of self control!! I think if you like coconut (which I know certain people don't) you will definitely enjoy these!!
